Chocolate Balls

Ingredients:
2 cups plain tea biscuits, ground.
1 cup powdered milk.
1/2 cup chopped walnuts.
1/4 cup unsalted butter, room temperature.
1/4 cup powdered sugar.
1 tablespoon unsweetened cocoa powder.
1 teaspoon pure vanilla extract.
1/4 cup semisweet chocolate, melted.
Method:
In a large bowl, mix the ground biscuits, powdered milk, walnuts, butter, powdered sugar, cocoa powder, and vanilla extract.
Form the mixture into small balls.
Dip the balls into the melted chocolate, then allow them to cool on a tray lined with parchment paper.

Oatmeal Banana Cake

Ingredients: 1/2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1 cup quick-cooking oats. 1/2 cup packed light brown sugar. 1/4 cup granulated sugar. 1/2 cup vegetable oil. 2 large eggs. 1 teaspoon pure vanilla extract. 3 ripe bananas, mashed. Method: Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. In a separate bowl, mix the oats, brown sugar, granulated sugar, oil, eggs, vanilla, and mashed bananas. Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.

1 cup (2 sticks) unsalted butter, room temperature.

1 cup buttermilk.
1 tablespoon apple cider vinegar.

Method:
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Stir in the apple cider vinegar until just combined.
Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

1 teaspoon salt.
1 cup buttermilk.
1 cup whipped cream.

Method:
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined. Stir in the buttermilk until the mixture is smooth.
Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
Decorate the cake with whipped cream before serving.
